Healthy Mother’s Day Menu
Mother’s Day is almost here! Speaking from some experience here – since I have a really awesome mom and happen to be a mom – I think one of the best things you can do to celebrate your mom on Mother’s Day is make her a special meal. I mean, she most likely fed you for like 18 years (or more), so why not make her something amazing?! And, why not make it healthy?! So, I have scoured the internet for you and compiled a list of some delicious, and nutritious, Mother’s Day meal ideas. Here is what I came up with. Good luck and Happy Mother’s Day!
For Brunch:
If your mom likes a fun cocktail with her Mother’s Day Brunch (just FYI, she probably does), start out with this fizzy Pomegranate Mimosa. Then, let the meal begin. First, an Asparagus Frittata with Herbs and Mozzarella accompanied by some Crispy Smashed Potatoes with Garlic Pesto and a Strawberry Avocado Spinach Salad with Poppy Seed Dressing on the side. Then, finish off this yummy brunch with some Lemon Thyme Shortbread Cookies for a sweet ending.
For Dinner:
“Hey mom, check out this Spring Vegetable Crudités I made you, and while you’re munching, sip on this Spicy Grapefruit Margarita” (if your mom’s not into spicy, just leave out the jalapeños and spicy rim, or try these Blood Orange Margaritas instead). Yeah, that might score you a few points.
Then, move on to the main course of Garlicky Baked Salmon with a Fennel & Clementine Chopped Salad to go along with it. Add an Herbed Quinoa and Chickpea Salad or some simply Roasted Cauliflower to round out the meal.
Finish it all off with a Blueberry Crisp with some fresh whipped cream on the side, and I’d say your mom will be one happy lady!
